Pear and Arugula Salad with walnuts and feta
Fresh greens are powerhouses of nutrition. High in essential vitamins and minerals, they promote healthy digestion, improved circulation, strengthened immune system, and clear congestion in the lungs, liver and gall bladder. Walnuts have Omega 3 fats and Pears have natural sugars and high fiber. All of which gives our bodies a better chance of meeting stress with grace.
4 whole pears
1 bag of arugula
1 head of romaine
1/4 mild red onion
1 cup of dried cranberries
1 cup of walnuts
1/2 cup feta cheese
2/3 c. balsamic vinegar
2/3 c. olive oil
1/2 c. maple syrup
sea saltand fresh ground black pepper to taste
Wash the pears and then de-seed them. Cut the pears into thin slices and place to the side. Wash and dry the arugula and romaine and put into a large salad bowl. Lightly roast the walnuts on top of the stove in a skillet for a few minutes allow to cool. Chop walnuts into quarters or to taste. Slice onion thinly and add to salad greens. Add pears, cranberries and nuts , tossing all ingredients except feta together. Add feta last , sprinkling on top for a beautiful presentation.
Find a glass dressing bottle or spray bottle and combine the vinegar, oil and maple syrup with some sea salt to taste. Place next to sald
