Citrus Mint Blueberry and Canteloupe Refresher
Dark berries are super foods! They are antioxidant, anti-inflammatory, and anti-viral. They help prevent cancer, and heart disease, as well as obesity. Mint is beneficial in supporting cognitive function and citrus provides cleansing and Vitamin C. They enhance memory and have a role in preventing age-related declines in neural function.
1 whole canteloupe
2 pints of blueberries
1/2 cup of lemon zest
1/4 cup of minced spearmint
1/4 cup of maple syrup
1 cup of creme fraiche
Wash the blueberries in a colander and set them aside to drain. Cut the canteloupe in half and deseed. Trim off the skin and cut into medium chunks or small star shapes. Place both blueberries and canteloupe in a large bowl and place in refrigerator. Zest the lemons and mince the mint. ( I like to use my juicer to do the job as the zest comes out perfectly minced and intermingled with the mint and it is much faster ). Place the zest/mint mixture in a small bowl and add syrup allowing it to rest after mixing all ingredients together thoroughly. When ready to serve take the fruit from the refrigerator and mix in the zest mixture being careful not to bruise the fruit. Add dollops of creme fraiche on top and voila a lovely light dessert.
